Grilled Peach & Halloumi Skewers with Balsamic Glaze
- Ingredients: 2 Mackintosh peaches, pitted and cut into 1-inch wedges; 8 oz halloumi cheese, cut into 1-inch cubes; 1 red onion, cut into wedges; wooden or metal skewers. For glaze: 1/2 cup balsamic vinegar, 1 tbsp honey.
- Instructions: Thread peach, halloumi, and red onion onto skewers. In a small saucepan, simmer balsamic vinegar and honey until reduced and slightly syrupy (about 5-7 minutes). Grill skewers over medium-high heat for 3-4 minutes per side, until peaches are slightly caramelized and halloumi is golden. Drizzle with balsamic glaze before serving.
Mackintosh Summer Corn & Tomato Salad
- Ingredients: 3 ears Mackintosh corn, kernels removed (raw or lightly blanched); 2 cups mixed Mackintosh tomatoes (cherry, grape, or chopped slicers); 1/2 red onion, finely diced; 1/4 cup fresh basil, chopped; 2 tbsp olive oil; 1 tbsp white wine vinegar; salt and pepper to taste.
- Instructions: In a large bowl, combine corn kernels, tomatoes, red onion, and basil. In a small bowl, whisk together olive oil, white wine vinegar, salt, and pepper. Pour dressing over salad ingredients and toss gently to combine. Serve immediately or chill for flavors to meld.
